Celiac Disease
The word Celiac in the dictionary means stomach region. All "Celiacs" are allergic to wheat products. This is basically because no human has the digestive system to process the gluten found in wheat. To help us they found that pre-digesting the wheat with yeast helped us tolerate it. Today the yeast process takes too much time to allow low cost food supply and now it is common to use "self rising bread mix". This has loaded our digestive system and key to digestion is the liver. When it becomes overworked it fills with fatty deposits. The undigested wheat products allow internal yeast to flourish and we develop sugar imbalances that lead to diabetes. Whole wheat is the worst and this is why so many kids are becoming diabetics. Over time the fatty deposits spread to the arteries and we have high blood pressure and weight gain.
